Merchant’s heart guide to perfect pouring

We want bartenders to experiment with our spirit enhancers, and create their own imaginative recipes. But we’ve done a lot of research into carbonation and ingredients so that we can help Merchant’s Heart pourers enjoy the best drink possible – from keeping it perfectly fizzy for as long as possible to getting the concentration right and adding garnishes that compliment, rather than kill, the taste and carbonation.

Start

Perfect Pairing

Select a spirit and the Merchant’s Heart that will perfectly enhance its characteristics.

Choose a glass

It needs to be big enough to pack with large ice cubes and ideally with a stem so you can keep it cool.

Chill the glass in the fridge or by filling it with ice cubes for a few minutes and drain excess water.

Pour the spirit & steep the herbs

Pour the spirit (we use a 50ml per 150ml of Spirit Enhancer or a 1:3 ratio). If you are using herbs, spices or dried citrus to flavour your drink, steep them in your spirit for a few moments to let the flavours infuse.

Pack with ice

Pack your glass with as much ice cubes as possible. Large ice cubes melt slower, diluting the flavour of your drink less.

Add the spirit enhancer

Slowly pour 150ml of Merchant's Heart against the side of the glass.

Stir Gently

Gently stir once or twice very slowly.

Garnish

Garnish the drink with a little more citrus zest, spices or flowers (all things playful and beautiful).

When using citrus, always use dehydrated slices or zest. Zest it closely over the top of the glass so that the oils spray into the glass and around the rim. Avoid using wedges as this increases carbonation loss.
